The water-soluble vitamin C, also called ascorbic acid, is probably the best known of all vitamins. It is found primarily in fresh fruits and vegetables, is involved in many metabolic processes and protects cells from aggressive oxygen compounds (free radicals). Unlike plants and most animals, however, the human body cannot produce or store vitamin C itself. Vitamin C plays an important role in the formation of collagen, the most abundant protein in the human body and the most important component of our connective tissue. Vitamin C contributes to normal collagen formation for normal function of blood vessels, gums and teeth, bones and cartilage and skin.
